Recipe: Delicious Turai ki sabji

Turai ki sabji. Turai Ki Sabzi is a ridge gourd curry. It is a wonderful curry made with ridge gourd which is called as 'turai' in hindi and this is a simple veg curry. Turai Ki Sabzi is a North Indian recipe for stir-fried Chinese okra.

The ridge gourd or turai is cooked in the tomato-based gravy to make this amazing dish. This is rich and flavourful curry. Most of the people don't like to eat Turai or ridge gourd. In north India ridge gourd curry is called Turai ki sabji and in Andhra we call it Beerakaya kura.

Traditionally ridge gourd curry uses onion, tomato and green chilly. Today I am using red chilly powder,garam masala and peanuts. Simple basic ingredients which are easily available at home, goes into making this sabji. This curry is called Turai ki subzi (Tori, Turiya) in North India, Beerakaya Curry in some parts of South India. This exact same method can be used to make a curry with Sponge Gourd, called Gilki ki Subji in Hindi or with Zucchini, also called Courgette.
