We love having Mexican food for dinner and think it's best when it's homemade! It's ground from lean sirloin, so it won't exude as much fat and grease as it cooks. Brown ground beef until thoroughly cooked; drain. Spoon meat mixture onto tortillas roll-up and place seam-side down in lightly greased baking dish. Pour remaining enchilada sauce over top.
